The spicy and aromatic cinnamon is available in 2 forms - cinnamon stick and grounded cinnamon powder. The bark is peeled off from the tree and is left to dry in the sun. After a few hours, the bark rolls up to form quills which are known as cinnamon sticks. These sticks are then finely crushed to form cinnamon powder.

They are different kinds of cinnamon sticks available in the market. The following types are most widely used for cooking:

  • Ceylon cinnamon: It is also popularly known as true cinnamon. It is lighter and is slightly sweet. It originated in Sri Lanka and is used for curry dishes. In recent years, this cinnamon has also been used in cakes, biscuits, breads and other bakery items.
  • Chinese cinnamon: Popularly called Cassia as it is gotten from the cassia tree, this type of cinnamon is quite popular in the South Asian countries. It is cheaper than true cinnamon and is spicier. It has a pungent odor. It is used in exotic preparation of meat, curries, etc.

Cinnamon is so popular in the world due its medicinal properties. It is an antiseptic and has germ-killing capacity. Therefore, it is used as a mouth wash and relives toothache. It is a calming herb and reduces stress and vomiting sensation, nausea, etc.
