Before starting the grilling, it is a good idea to apply seasoning onto the chicken pieces to add some flavor. One needs to be generous while applying the seasoning because there are chances of losing some of it while grilling. One more thing to do before you start grilling is to ensure that the grill is preheated to a high temperature.
When one starts the grilling, it is better to put the larger pieces of chicken closer to the high temperature, and the smaller pieces a little further away. The temperature needs to be around 350 to 375 degrees F. In about 30 minutes, the chicken would generally be done but before that, after around 15 minutes, one should check and move the undone pieces closer to the hotter part of the grill.
You should ensure that you continue grilling the chicken until the internal temperature of the chicken reaches 165 degrees. This is in case the chicken is not going to be seasoned with any sauce. But for those who want to apply barbecue sauce on the chicken, they need to let the temperature go down to less than 265 degrees F before applying the sauce.
Finally before removing the chicken from the grill, each and every piece has to be checked to see if it is done or not.
Though chicken may not get overcooked, it will become dry due to excess grilling, and as a result it may lose its taste and flavor. Thus, sticking to the right grilling temperature is important for a juicy chicken bite.
