Best Coconut Creme Pie Recipe

There are many sumptuous dishes that can be prepared from coconut. Coconut crème pie is one such dish.

The ingredients required for the preparation of this dish include 3/4 cup of cornstarch, 1 1/2 cups of granulated sugar, 1/2 teaspoon of salt, 4 cups of scalded milk, 2 beaten eggs, 1 1/2 teaspoons of vanilla, 2 tablespoons of margarine, 1/2 teaspoon of coconut extract, 1 cup of coarsely shredded fresh coconut, 1 baked 10-inch pie shell and 4 cups of whipped cream.In order to prepare this dish, first one needs to mix the cornstarch, sugar and salt together in a pan. Then, the scalded milk should be stirred into the cornstarch mixture slowly. This entire mixture should then be boiled for about two minutes till the contents seem to be thick and glossy. Constant stirring is important while boiling. A small proportion of this boiled mixture is to be added to the eggs, and beaten properly to blend well. The mixture in the pan should also be beaten for about two minutes over medium heat to allow slight thickening. However, one needs to ensure that the process does not lead to curdling.

Now the burner is to be switched off, and vanilla and margarine are mixed to the contents in the pan. The mixture should be strained to remove all the lumps. The coconut filling is now ready. It should be covered with a plastic wrap and set aside to cool. After cooling, the coconut extract and half of the coconut is added to this filling. The filling can now be poured into the pie shell and refrigerated for chilling.

Later, the whipped cream is to be spread over the pie. The pie is garnished with the leftover coconut. The delicious coconut crème pie is ready to eat!
