If you want to learn how to cook eggplant, you need to pay attention to just one simple instruction. Cook the vegetable until the insides become soft and mushy. In case you do not cook it enough, the insides will have a chewy feel which is not appreciated by people.

Also, before cooking the vegetable, make sure you salt it. This will remove the bitterness and also help to eliminate air pockets. If the recipe calls for peeling, peel the skin off in strips. Then salt the vegetable and keep it aside for an hour. After that wash it well to remove the salt and then dry it thoroughly to get rid of all the water. This can be done by gently squeezing the vegetable between the palms of your hand and then rubbing the vegetable with a kitchen towel.

Eggplants can be grilled, baked, broiled and even cooked in a microwave oven.

In order to cook it like it is done in Southeast Asia, grill the eggplant first. This can be done by wrapping the vegetable in foil and then poking the foil in several places. Place it on the grill and wait for it to cook thoroughly, a process that will take around a few minutes. After that, skin and mash the vegetable and set it aside. Now heat some oil in a pan, add chopped onions and fry until they turn golden brown. Add minced garlic, ginger and jalapenos along with a little cumin, turmeric, coriander and cayenne pepper. Add tomatoes and cook until they become soft. After that add the mashed vegetable and chopped cilantro and cook for another 20 minutes. Check the salt and serve piping hot a long with boiled or steam rice.

You can also stew the vegetable. Cut the eggplant in cubes, add tomato juice, salt and pepper and simmer for 20 to 25 minutes. You can flavor this dish with any other herbs or condiments you want.
