You can cook eggplant in a number of ways. The best part is that the skin of this vegetable is also edible. So, invariably there is no need to peel it off. When frying, the skin offers eggplant a delicious taste even if the raw skin looks tough. However, here is how to peel an eggplant.

If your recipe calls for peeled eggplant, then slice the stem away first. Then use a vegetable peeler and run it down the sides of the eggplant to peel it. The peel will come off very easily this way. If you are frying the eggplant, you can leave strips of peel alternating with peeled eggplant. This will give a new look and texture to your fried eggplant.

If you are roasting, broiling, or barbecuing your eggplant, then use a fork to pierce the skin in up to three places. Now, apply a bit of oil on the skin of the eggplant. Next, introduce the eggplant to the heat source. The flesh of the eggplant will cook inside the skin, giving it a nice smoky flavor. Once the skin has totally blackened and charred, dip the eggplant in cool water or hold it under running water. Once the eggplant is cool enough to touch, use your fingers to peel it off. The skin should come out quite easily. The skin will just slide off leaving you with cooked eggplant flesh that can be used in a variety of ways. You can use the flesh inside by mashing it and adding seasoning to it. The seasoning can contain salt, pepper, herbs, and a bit of lemon juice.
